
Siblings Chau Nguyen and Minh-Man Lavigne run the family-owned Kobe Japanese Steakhouse chain. They just opened store number fourteen in the Alafaya area of Orlando. CONGRATULATIONS!

Pinnacle integrated their POS system with Midnite Expresses Teppanyaki Table Software. This software is designed to handle the special aspects of having a chef create dinners for ten to twelve customers at one table on several different checks. Not only are the checks handled separately, but ingredients to produce the meals are calculated and requisitioned from the kitchen.
Kobe Japanese Steakhouse also uses iControl for Enterprise Reporting, menu changes, Accounting and Payroll Interfaces. All information is available on the internet to better assist in managing their sites.
The restaurant specializes in Teppanyaki cooking and sushi cuisine. Guests will delight as a personal chef prepares succulent steak, chicken and seafood dishes according to the ancient Hibachi style of food preparation. While the preparation method is traditional, each chef brings his own sense of humor and spontaneity to the table. You will be dazzled and delighted!
A specialty drink menu is also featured. For starters, try one of the sumptuous oriental cocktails, which are painstakingly mixed to tantalize the taste buds and soothe the soul. Every meal is a culinary and performance delight that you are sure to enjoy.

Employee Spotlight - James Clark
Regional VP
James started with Pinnacle in February of 1990. He brought expertise to Pinnacle Software, Inc. that was entering the hospitality POS arena. James had been a District Manager and Major Account Manager for a major POS manufacturer. He had been a GM and Regional Manager with Victoria Station and Papas Restaurant Group and a graduate of the Conrad Hilton School of Hotel/Restaurant Management at the University of Houston.
James is on the Florida Restaurant and Lodging Association’s Allied Member Council that raises over $100,000 dollars a year in support of the restaurant and lodging industry.
At Pinnacle, James is responsible for the CenJax Region of Pinnacle. This includes the Tampa/St. Pete, Orlando and Jacksonville offices.
James was a founding member of the Firehouse Competition BBQ team. They competed across the southeast U.S., at Memphis in May and in the Jack Daniels National Championships.
James’ free time is now spent on the 3 acre homestead with his wife Melinda, the dogs, cats and 60 plus free range chickens that produce approximately 3 dozen organic eggs a day.

POSitouch Tip: Sell more Appetizers, Wine and Desserts!
On the split check screen there is the ability to split items. A savvy server will use this to their advantage. At the point of offering appetizers, wines or desserts; when the table hesitates, suggest… “if you would like to share, I can split it between the checks.” It is amazing how many more items you sell when no one is worried about who gets stuck with the total cost.

Dinerware Tip: What should my cost be?
When setting up items in Dinerware you can enter the theoretical cost of an item. If you do so, you can pull a report for a week or a month and compare it to your actual cost. This lets you know, base on actual menu mix, how your costs compare to your best case scenario. | |

iControl Loss Prevention Tip: Enforcing Beverages
Have your Pinnacle account manager turn on “Enforce the Beverages” in your POSitouch system. This feature will compare the number of beverages that are on your guest check to the number of covers. If the number of beverages does not match the covers, the server cannot print the check – forcing them to accurately ring up beverages.

PCI Compliancy and Forest Fires
| Smoky the Bear says “Only you can prevent forest fires!” Likewise, only you can assure that you are PCI DSS Compliant. A 12 step requirement list is below.
The PCI DSS, a set of comprehensive requirements for enhancing payment account data security, was developed by the founding payment brands of the PCI Security Standards Council, including American Express, Discover Financial Services, JCB International, MasterCard Worldwide and Visa Inc. International, to help facilitate the broad adoption of consistent data security measures on a global basis.
The PCI DSS is a multifaceted security standard that includes requirements for security management, policies, procedures, network architecture, software design and other critical protective measures. This comprehensive standard is intended to help organizations proactively protect customer account data.
The PCI Security Standards Council will enhance the PCI DSS as needed to ensure that the standard includes any new or modified requirements necessary to mitigate emerging payment security risks, while continuing to foster wide-scale adoption.
Ongoing development of the standard will provide for feedback from the Advisory Board and other participating organizations. All key stakeholders are encouraged to provide input, during the creation and review of proposed additions or modifications to the PCI DSS.
The core of the PCI DSS is a group of principles and accompanying requirements, around which the specific elements of the DSS are organized:
Build and Maintain a Secure Network
Requirement 1: Install and maintain a firewall configuration to protect cardholder data
Requirement 2: Do not use vendor-supplied defaults for system passwords and other security parameters
Protect Cardholder Data
Requirement 3: Protect stored cardholder data
Requirement 4: Encrypt transmission of cardholder data across open, public networks
Maintain a Vulnerability Management Program
Requirement 5: Use and regularly update anti-virus software
